Ingredients:
Large can of chicken broth
2 cans of spinach
1 can of diced tomatoes
1 package of cheese tortillina’s
2 eggs
1/4 cup of parm cheese
salt and pepper to taste.
Instructions:
Open up all the can stuff and put them in a pot. Open all the cans of stuff and put them all in a pot. You may need to add a couple smaller cans of chicken broth. I always do. Bring those to a boil. Add some salt and pepper to taste. Once the soup is doing a medium boil then add your package of frozen tortillinas. After they are heated through take you eggs and crack them in a small bowl and add the parm cheese to them and beat them up like your making scrambled eggs. Then, drizzle the egg mixture into the soup while it is hot and semi boiling. Let simmer another 15 minutes, add more salt or pepper if needed and serve.
Serve with some crusty french bread. Yummy!
